1 cup butter, softened
1 1/2 cups brown sugar
2 eggs
1 teaspoon vanilla
3/4 cup cocoa powder
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups chocolate chips
Cream butter and brown sugar for 5 minutes.
Add eggs, one at a time, scraping down the bowl after each addition. Mix in vanilla. In a separate bowl, combine cocoa powder, flour, baking soda and salt. Add flour mixture to butter mixture until just combined, scraping down the bowl as needed. Incorporate chocolate chips evenly. Refrigerate dough for one hour.
Using a cookie scoop, scoop dough onto baking sheet lined with parchment paper. Bake in a preheated 350 degree oven for 9-10 minutes.
Let cookies cool on baking sheet for 10 minutes before removing to racks to cool completely. Store in an airtight container.
